In the the next turn, the 5/5 Inkmoth Nexus could not be targeted/destroyed by Nature's Claim or Viridian Corrupter, it seemingly had lost it's artifact type when the flying and infect was removed. We tested it in another game also with the same result.
It was my understanding that it would remain an artifact in the next turn but lose infect and flying.
That should be a bug in MTGO. Tezz's second ability makes it into an Artifact Creature, so even when Inkmoth's animation effect wears off, it should still be a 5/5 Artifact Land Creature - Blinkmoth, and thus should still be a legal target for that spell and that ability.
You are correct in believing it remains an artifact; this appears to simply be a bug.

You're essentially right, but note that it loses the Blinkmoth creature type. Tezzy's effect doesn't give it a creature type, and the effect that gave it the Blinkmoth type has worn off.

Can someone please clarify why Tezzeret's ability doesn't negate Inkmoth's Land supertype? A land enchanted by Spreading Seas becomes an Island and only an Island (replacing any abilities of a basic or nonbasic land with "Tap: Add U to your mana pool."), correct? Do supertypes not interact in the same way that subtypes replace each other?

Land is a type, not a supertype.

It's because of a rule in the CompRules which states effects that make something an artifact creature, by default, cause that creature to retain all its other types/subtypes.

Well first of all, you're comparing apples and oranges. Type changing and subtype changing are different. There's an explicit rule saying that when a land is given a subtype without the "in addition to it's other types", it loses all it's abilities.
As far as Tezz is concerned, because the text "becomes an artifact creature" is such a popular effect, the rules explicitly cause it to retain it's previous types.
So what would happen if you Spreading Seas an Inkmoth that has been 5/5'd by Tezz? Is it a plain 5/5 Artifact Land (Island) that can't reanimate into a 1/1 infect flyer?

Correct.
Spreading Seas won't alter the other types, so it's still an Artifact Creature Land, but it will remove the rules text the Nexus originally had, so it won't have the animation effect or the ability to tap for 1. (Although it can now tap for U)

The latest Comprehensive Rules are also good, and can be found here.
