Let say I have 2 x pitfall trap in my hand and 2WW mana left. My opponent attack with 2 of his creature. Can I firstly pay 2W to destroy one creature, and then pay W(Trap cost) to cast the second trap and destroy the other creature?
Unlike exalted, which triggers when creatures attack (verb), Pitfall Trap cares about creatures which are attacking (adjective) - the former checks the declaration of attackers, while the latter checks the current state of things. So this works just fine!

Can I actually block 2 of his 1/1 creature with 2 of my 1/1 creature and take 1 damage. After damage is dealt(End of combat step), can I pay W(Trap cost) to kill my opponent remaining 1/1 creature?
If yes, Why?

Creatures are considered attacking, blocking, blocked an unblocked all the way up to the end of the end of combat step.
