If my opponent has Deathbringer Liege out and plays a black/white spell and wants to destroy my creature.
Can I respond to his playing of black/white spell and kill the Liege without the lieges ability going off ?

No. Both of Deathbringer Liege's abilities trigger when a black and white spell is played. Those abilities are put onto the stack before either player gets priority to play a spell or ability, and those abilities will resolve independently of the destruction of Deathbringer Liege.
No. Once the spell is played those triggered abilities are on the stack before you gain priority, and removing the Liege from play isn't going to affect those abilities.
