Does anyone know if I have riptide mangler on the board and play phyrexian dreadnought if I can change the attack value and sacrifice the mangler instead? Does the phyrexian dreadnought keeps its attack though?

You can. Dreadnaught has an ETB ability that goes on to the stack and can be responded to with Riptide Mangler's own ability. You would then be able to choose Riptide Mangler to sacrifice since then it would have 12 power.
