As soon as you finish casting the Crab, Volo's trigger condition is met. That trigger goes on top of the original spell. Your opponent can now respond or let the trigger resolve to make a copy of the spell. Either way, the trigger will make a copy of your spell when it resolves even if the spell gets countered, in which case it just uses its last known information to make the copy. Assuming no further responses, the copy resolves making a creature token. Lastly, if there are no responses still, the original spell resolves if it's still on the stack.
