Say your board state is Terror of the Peaks, Lathliss, Dragon Queen and like 14 other creatures, hardly any exaggeration there.
Then you cast Sakashima's Will targeting Terror. Does Lathliss keep her ability of creating 5/5 tokens or no?
No. When Lathliss becomes a copy of Terror of the Peaks, all of her base characteristics (name, color, types, abilities, power/toughness) are replaced with Terror's. She doesn't keep her abilities.
First, only the first mode of Sakashima's Will targets, and that target is an opponent. And no, the second mode makes all your creatures into Terror of the Peaks. As soon as that effect is created, there is no Lathliss anywhere on your side, all your creatures are Terrors. And as there is no creature yet entering, there are no triggers. Yet. Any creature entering the batlefield under your control that turn will likely wreak havoc, though.
"Choose" is not "target", though. You "target" on cast, you "choose" on resolution. (If it's "choose target", you obviously select on cast.) Targets can be responded to, choices that aren't part of the casting process cannot.
