I play Cavern of Souls and choose type "Hydra". I want to play Metallic Mimic using the Cavern, and intend to choose type "Hydra" for the Mimic. Would I be able to use the Cavern's second ability to make the Mimic uncounterable? I would assume not, as I don't believe the Mimic's first + second abilities would make it a Hydra until after it's hit the field, which is long after any casting considerations, but I figure I should check.

No. The Cavern's third ability "T: Add one mana of any color. Spend this mana only to cast a creature spell of the chosen type, and that spell can't be countered." specifies "of the chosen type", not "that will have the chosen type Real Soon Now".
614.1. Some continuous effects are replacement effects. Like prevention effects (see rule 615), replacement effects apply continuously as events happen—they aren’t locked in ahead of time. Such effects watch for a particular event that would happen and completely or partially replace that event with a different event. They act like “shields” around whatever they’re affecting.

Why bother with mere rulings when so many answers can be found in the Rules?
To be clear, while Metallic Mimic is on the stack (including at the moment you pay its costs to cast Metallic Mimic), Metallic Mimic is generally a Shapeshifter and no other creature types (because its second ability functions only while Metallic Mimic on the battlefield [C.R. 113.6]) (C.R. 601.2, especially at the moment at C.R. 601.2h). Thus, in general, for the purposes of Cavern of Souls's last ability, you can spend the mana you add due to that ability to cast Metallic Mimic only if Shapeshifter is the chosen type for Cavern of Souls.
Note that the mana you add due to Cavern of Souls's second ability ("T: Add C") has no restriction or effect attached to it. Thus, that mana can be spent, for instance, to cast Metallic Mimic or any other spell, regardless of what creature types it has if any (it's just that the spell can then be countered like any other). See also this thread.
DOH! I apparently can't count, as I was trying to ask if you could use the Cavern's 3rd ability (I guess I was thinking 2nd activated ability?) to make the Mimic come in uncounterable. Thanks for seeing through my gaff.
