Opponent controls Goring Ceratops and two 3/3 beast creature tokens. I control a tapped Kalamax, the Stormsire. He announces attackers with all 3 creatures granting the two beasts double strike. I respond to his attack before announcing defenders by casting Act of Aggression taking control of Goring Ceratops and a beast (since I copied it.) I block the remaining beast token with Goring Ceratops and since they are both 3/3 double strike they kill each other. The other beast under my control does nothing and returns back to his control at end of turn. Is this all done correctly?
It's all correct. You can cast in the declare attackers step after observing the resolution of Ceratops' ability, because you always get priority once before an advancement in the turn, step or phase.
Gaining control of the two creatures removes them from combat, but this is not prejudice to their entering combat right away as blockers.
