My opponent is first and plays only a land.
Then, in my turn, I exile Simian Spirit Guide to get one R and then play Crack the Earth to make my opponent sacrifice their land, while I don't have anything to sacrifice.
Can I play it anyway, even if I can't sacrifice anything?
The effects of a spell don't restrict you when you are casting it. You only need to ask yourself if you can choose a mode for a modal spell, if you can choose appropriate targets, and if you can pay the spell's cost.

Yes, you can do that.
As HH already said, you are not expected to care about the final outcome of spells you cast; all you need to care about is paying for the spell (and choosing targets/modes/extras, when applicable).
The spell will resolve and players will do as it says, as much as possible.
If you have no permanent to sacrifice, well, that's that!
609.3. If an effect attempts to do something impossible, it does only as much as possible. Example: If a player is holding only one card, an effect that reads “Discard two cards” causes them to discard only that card. (…)
