I have a question: I have an inkwell leviathan and I was wondering would it get the effect of vivien Reid's emblem even though it has shroud because it states that it can't be targeted by spells or abilities. Would Vivien Reid's emblem still work on it?

To find out wether something targets or not, simply look for the word "target". Without it, there are no targets. For example, Vivien's second ability targets. For some keyword abilities the "target" is hidden within the rules, though. But usually it is also included in the reminder text for that keyword ability in those cases.
In general, just being affected does not make something/someone a target.
115.10a Just because an object or player is being affected by a spell or ability doesn’t make that object or player a target of that spell or ability. Unless that object or player is identified by the word “target” in the text of that spell or ability, or the rule for that keyword ability, it’s not a target.
115.10b In particular, the word “you” in an object’s text doesn’t indicate a target.
