During the first combat damage step, you can have the Pouncer deal 1 damage to the blocker, and 2 damage to the opponent. You can assign more damage to the blocker and less to the opponent, if you want, but there's no good reason for that.
Then, the 1/1 dies.
There's a passing of priority, and later the first combat damage step ends.
During the second combat damage step, as the 1/1 is dead, Pouncer deals all 3 damage to the opponent, because of Trample.
