One of the Gatherer Ruling says "If Mirage Mirror becomes a creature the same turn it enters the battlefield, you can’t attack with it or use any of its Tap abilities (if it gains any) unless it has haste." Does the first instance of the word "it" refer to Mirage Mirror or the creature?
So for example, if I play Mirage Mirror and on the same turn have it copy a creature that does not have summoning sickness, does the Mirage Mirror copy have summoning sickness? Or does the Mirage Mirror copy have summoning sickness when it copies a creature with summoning sickness?
Mirror would have summoning sickness unless the copied creature has haste. it doesn't matter how long the copied creature has been in play. the turn after you play Mirror you can copy a creature and swing that turn, but the Mirror the turn it is cast has functional summoning sickness

Summoning sickness is based on how long you've controlled the permanent that's a creature, not how long it's been a creature, and summoning sickness is not something that gets copied, it's about how long you've been controlling the permanent/card, no matter what it becomes. If the Mirror is currently a creature and doesn't have haste, you need to have controlled it continuously since beginning your turn in order to attack with it.
I'm a former judge (lapsed), who keeps up to date on rules and policy. Keep in mind that judges' answers aren't necessarily more valid than those of people who aren't judges; what matters is we can quote the rules to back up our answers. When in doubt, ask for such quotes.
