If i cast hidden strings with ink-treader nephilim as target, can I choose if tap or untap the targets of copies created by the nephilim, or I must keep the choice made in the original spell?
If people are sick of reading about stuff just stop taking part. You have 100% control over what you read. Simic Ascendancy isn't going to get banned just because you didn't tell someone to shut up on the internet.

And for the purposes of Ink-Treader Nephilim's ability, a spell doesn't "targe[t] only Ink-Treader Nephilim" (C.R. 108.1) if it targets anything other than Ink-Treader Nephilim (C.R. 115.9c). Therefore, if it targets both Ink-Treader Nephilim and another permanent, Ink-Treader Nephilim's ability won't trigger (C.R. 603.4). See also this thread.

No, you can't. Hidden Strings REQUIRES two targets, no more, no less.

For Hidden Strings, choosing two targets (as opposed to none or just one) is not optional (C.R. 601.2c). A spell can indicate that a given target is optional by using the formulation "up to one target..." or "up to one other target..." (compare Hidden Strings with Relic Crush) (see also C.R. 107.1c).

If you cast Psychic Puppetry, it will normally require only one target (C.R. 115.1a). (Note that Psychic Puppetry now says "You may tap or untap target permanent", but even so, the target still has to be chosen as you cast that spell [C.R. 108.1, 601.2c]; compare Psychic Puppetry with the first ability of Teferi, Timebender.)
However, if you splice Psychic Puppetry onto a spell that requires at least one target (such as Glacial Ray), the resulting spell will require more than one target (C.R. 702.46a, 601.2b-c; see also C.R. 612.8). Even so, though, if the same permanent is chosen for all those targets (such as Ink-Treader Nephilim), the resulting spell will nevertheless "targe[t] only" that permanent for the purposes of Ink-Treader Nephilim's ability (C.R. 115.9c, 108.1).
