Say a player has three Su-Chis in play and I put out an Energy Flux, during that player’s upkeep can they let one Su-Chi die and then use that mana to pay for the other two?
Yes. Energy Flux grants a triggered ability to all artifacts. Those are triggers and use the stack, and like all objects on the stack, they resolve one at a time with all players getting priority in between and any new triggers generated by a resolving Flux trigger going on top of the others. So by the time the second Flux trigger resolves, the player has four mana in the mana pool to pay the cost with.
