I would imagine OP arrived at 10 on the (incorrect) assumption the tokens enter one after another. 1 + 2 + 3 + 4 = 10.

I thought I might gain 10 life because I thought that they entered the battlefield one at a time.
As in: Embalm the Anointer Priest, get 4 tokens instead of one (thanks to the two Anointed Processions) and then because in my head I thought that they entered play one at a time I thought that the first token entering the battlefield would give me 1 life, the second 2 (because there's already one in play), the third 3 (because there are two in play by the time he enters) and the fourth 4 totalling 10 life.

This ruling is a direct application of rule 614.1.
614.1: Some continuous effects are replacement effects. (…) Such effects watch for a particular event that would happen and completely or partially replace that event with a different event.
603.6a Enters-the-battlefield abilities trigger when a permanent enters the battlefield. These are written, “When [this object] enters the battlefield, . . . “ or “Whenever a [type] enters the battlefield, . . .” Each time an event puts one or more permanents onto the battlefield, all permanents on the battlefield (including the newcomers) are checked for any enters-the-battlefield triggers that match the event.
Let's suppose I have an Anointer Priest in my graveyard and two Anointed Processions in play. I now embalm my Anointer Priest. How much life do I gain? Is it 10?
You embalm Anointer Priest, and two replacement effects from both Anointed Processions duplicate tokens from one to two, and from two to four.
All four embalmed Priest tokens enter the battlefield together, and each of them "see" itself and the other three entering the battlefield.
Each of the four tokens therefore creates four "gain 1 life" triggers, 16 together.
