Blind Obedience only has a color identity of white. Reminder text is not considered for color identity. Everything in italics on a card has no game function whatsoever. That means reminder text mostly, but also ability words and flavor text.
Reminder text does not count towards Color Identity. Because the mana symbol is part of the reminder text, you can ignore it for the purposes of determining Color Identity.
If you didn't ignore it, Trinisphere (for example) could only be used in Black decks because its original printing has black mana symbols in the reminder text
To be clear, although extort's expanded rules contain (W/B) (C.R. 702.100a), that doesn't necessarily make the "rules text" of a card with extort have that symbol. Color identity is based, in part, on a card's mana cost and its "rules text" (C.R. 903.4), which does not include reminder text, and rules text doesn't contain the expanded rules of any keyword abilities it contains, including extort. In fact, reminder text and rules text are mutually exclusive: a card's text box "usually contains rules text" (C.R. 207.1), but "may also contain italicized text" (C.R. 207.2) such as reminder text (C.R. 207.2a).
