Shriekmaw will get to enter the battlefield regardless of whether it was cast with its evoke cost; if Shriekmaw was cast using evoke, this will make both evoke and its second ability trigger, and both abilities will go on the stack (in the order you choose) before players get priority to cast spells, such as Path to Exile or Supernatural Stamina (C.R. 702.73a, 608.3, 116.3b, 603.3b, 116.5, 116.1a). However, if your opponent casts Path to Exile in response, it will go on the stack above those abilities (and get to resolve before them) (C.R. 405.2, 116.4), meaning that if Shriekmaw is exiled this way, it won't be there to be sacrificed due to evoke (review C.R. 701.11a, 701.16a). (In any case, the ability granted with Supernatural Stamina won't affect Shriekmaw when it's exiled, since moving to exile is not the same as dying [C.R. 700.4].)

Yes to both. Sacrificing Shriekmaw because of Evoke is a triggered ability that can be responded to. If you respond with Supernatural Stamina, Shriekmaw will return to the battlefield after dying (allowing you to destroy another creature) and then stay on the battlefield since it's a new object that wasn't evoked. As for Path to Exile, while your opponent does have the opportunity to cast it and exile Shriekmaw before it dies, it is important to note that the destroy ability, which triggered when it entered the battlefield, will still happen. Abilities on the stack are independent from their source, and removal of the source doesn't stop the ability.
