If I already have Solemnity in play, what happens when Arixmethes, Slumbering Isle enters the battlefield? Does it enter tapped without any slumber counters on it? If so, what abilities will trigger? Will it trigger abilities that care when creatures enter the battlefield and/or lands?

Solemnity stops counters from being put on an artifact, creature, enchantment, or land as it enters the battlefield, as well as stopping counters from being put on them later.
Rule 121.6: Some spells and abilities refer to counters being put on an object. This refers to putting counters on that object while it’s on the battlefield and also to an object that’s given counters as it enters the battlefield.

Unless the rules have changed since the Melira, Sylvok Outcast and persist debacle, Solemnity doesn’t change counters entering with a creature due to the effect on that creature. The creature doesn’t “see” Solemnity’s ability as it’s entering, and so enters with the counters as normal. If the effect giving it counters were due to another permanent’s effect, however, then Solemnity would prevent those counters from being placed on that creature.
EDIT: My mistake, the rules have changed. The Ixalan rules change makes it so that Arixmethes would enter with no counters.

The Melira "debacle" was about the case where Melira herself has persist and dies. There never was a question as to whether a Melira on the battlefield would stop persist from putting a -1/-1 counter on another creature returning, she does stop it. The Melira / persist creature / sacrifice outlet combo has been present in Modern for a long while and has never stopped working. Here, since it's not Solemnity itself entering with counters, the rule and ruling chaikov quoted apply.

This isn't because of the Ixalan rules change, things would have worked the same before. I believe that did change the "Melira has persist" case, though.

Since it enters with no counters, Arixmethes' ability making it a land never applies. It will only trigger abilities that care about a creature entering, not those looking for a land entering. Such abilities check what the permanent looks like right after it has entered the battlefield to determine whether they should trigger.
I'm a former judge (lapsed), who keeps up to date on rules and policy. Keep in mind that judges' answers aren't necessarily more valid than those of people who aren't judges; what matters is we can quote the rules to back up our answers. When in doubt, ask for such quotes.
