If I'm running 4 leyline of sanctity to increase the odds in an opening hand, and 4 approach of the second sun would the hexproof from my leyline prevent me from winning the game using my second sun?
No, AotSS works just fine, hexproof doesn't interfere with it at all. Because hexproof only cares about abilties and spells your opponent's control and that target. Neither is true for your AotSS, a spell you control that doesn't target anything. Only if the affected objects/players are identified by the word "target" in a spell's/ability's text or the rules text for a keyword ability, is that spell/ability targeted. Merely affecting someone/something does not make that someone/something a target.
114.10a Just because an object or player is being affected by a spell or ability doesn’t make that object or player a target of that spell or ability. Unless that object or player is identified by the word “target” in the text of that spell or ability, or the rule for that keyword ability, it’s not a target.
114.10b In particular, the word “you” in an object’s text doesn’t indicate a target.

Shroud is still irrelevant. So is protection. Approach has zero targets.
