If I cast the Memory half of Commit // Memory then counter it with Kheru Spellsnatcher's unmorph ability am I able to cast Commit from exile? I would say what my guess is, but I have no idea how exile replacement interact.

When you exile the spell, you exile the entire card. Then, you get a chance to cast the card. With a split card, you get to choose what half to cast it as you cast it. Since Memory is not allowed to be cast anywhere besides the graveyard, it is not a valid choice here. So, you can cast Commit and only Commit in this case.
The important thing to note in this case is that Aftermath says to "exile it instead of putting it anywhere else". Since Kheru is exiling it, Aftermath's replacement effect to exile it won't do anything and Spellsnatcher successfully exiles it.
Note that neither aftermath nor flashback allow you to cast a spell with it from exile. Flashback means, in part, "You may cast this spell from your graveyard..." (C.R. 702.33a), and aftermath means, in part, "You may cast this half of this split card from your graveyard" and "This half of this split card can't be cast from any zone other than a graveyard" (C.R. 702.126a).
