In every example except for the Darksteel Cololssus, the answer is you pick. (The Colossus never actually goes to the GY)
That is because Mortuary has a triggered effect, and so does every other example you have provided, so you choose which order you want the triggers to go on the stack. The last one you put on the stack will be the first to resolve and that is where the card will go.
W may only be paid with white mana. U may only be paid with blue mana. B may only be paid with black mana. R may only be paid with red mana. G may only be paid with green mana. C may only be paid with colorless mana. 1 may be paid with white, blue, black, red, green, or clolorless mana.

So if the god died, the mortuary trigger would go on the stack and you have no options of stacking another trigger that would move the god from its current zone before the mortuary trigger can resolve.
Creatures with undying and without +1/+1 counters. (Butcher Ghoul)
It's your choice, depending on how you stack the two triggers from Mortuary and persist/undying, the creature will either go back to the battlefield or on top of your library. If the dying creature was somehow controlled by another player, but goes to your graveyard, then it depends on whose turn it is, since the other player will control the undying/persist trigger. If it's your turn, undying/persist will be on top and resolve first, returning the creature to the battlefield. If it's the other player's turn, the creature goes to the top of your library.
Creatures that return to your hand upon dying (The Scarab God)
The Scarab God's trigger does not return the card right away, but at the beginning of the end step. So Mortuary always wins out and the God goes on top of the library.
Creatures that are shuffled into the library as a replacement effect (Darksteel Colossus)
Mortuary doesn't trigger for those, since they never go to the graveyard and thus never die.
Creatures that are placed somewhere else in the library (Arashin Sovereign)
Creatures enchanted by auras that return them to the battlefield (Journey to Eternity)
Dying creatures targeted by abilities that return them to the battlefield (Nim Deathmantle).
Same as persist/undying. Also, Nim Deathmantle doesn't target the creature it returns.

A small correction regarding Ulamog. Since it has an "enters he graveyard" trigger, which is not a "leaves the battlefield" trigger, it is its owner who controls the shuffle trigger. so the part about different players controlling the triggers doesn't apply here.
Thanks! So I'm a bit unclear with cards like Nim Deathmantle. Can I still use its ability over Mortuary? I understand they're both triggers abilities so I can choose which one resolves first, right?
