1) Yes, you can return all of those cards with their ETB abilities.
Also note, that only Man-O'-War actually targets, the other two don't use the word target in their ability.
2) This doesn't work. As Equilibrium triggers when you CAST a creature spell. So it goes onto the stack while your Kraken Hatchling is still on the stack. So you can't target the Hatchling with the ability.
Also note, that Equilibrium isn't activated, it has a triggered ability, that you can pay mana to when the ability resolves.

Creatures like Shrieking Drake and Dream Stalker aren't like creatures like Man-O'-War. Man-O'-War's ability targets; the other two do not.
Man-O'-War's target is "target creature". Since the ability triggers when Man-O'-War enters the battlefield, it is on the battlefield. That makes it a creature, so it is a legal "target creature".
Dream Stalker tells you to perform an action to/on/with/at "a permanent you control". To interpret this kind of ability, you have to verify that the action indicated ("return to its owner's hand") is legal for the object you want to choose. Again, since the ability triggered, you know Dream Stalker is on the battlefield, which means it is a permanent. It is also certain that Dream Stalker is allowed to move into your hand. If, at the time the ability resolves, you control Dream Stalker, then you may choose Dream Stalker to be the permanent you return.

For reasons, I won't answer this question at this time.

Could I do that? I mean, do I get priority after paying the1 to target a creature with Equilibrium's ability?
Or do I have to untap the forest before paying Equilibrium's 1?

You can do what you are intending to do, but you cannot do it as you are asking. Once you have payed the mana for Equilibrium's ability it resolves immediately so the Charging Badger is in your hand and cannot be tapped with Earthcraft.
Instead what you would do is after casting Kraken Hatchling you tap a forest for a G and then activate Earthcraft targetting the same forest and taping Charging Badger. The Equilibrium's ability then resolves bouncing badger to hand after paying the floating mana and you are then able to tap the forest again to cast charging badger.
I have two questions:
1- Can creatures like Shrieking Drake, Dream Stalker and Man-o'-War target themselves to return to the owner's hand as they enter the battlefield?
2- Please look at the exemple below:
Can Kraken Hatchling be cast TWICE?
Not sure if my thought is correct:
- Use U to cast Kraken Hatchling
- Use G to activate Equilibrium and return Kraken Hatchling to my hand
- While Equilibrium's ability is on the stack: use Earthcraft to tap Kraken Hatchling and untap the island
- Use U to cast Kraken Hatchling again
Was it correct to cast Kraken Hatchling TWICE?

3- Still on the previous exemple, if I happened to have a Charging Badger on the battlefield, could I:
- Use U to cast Kraken Hatchling
- Equilibrium's ability goes to the stack
- I choose to pay G to target Charging Badger with Equilibrium's ability
- Use Earthcraft to tap Charging Badger and untap the forest
- Use G to cast Charging Badger again
Could I do that? I mean, do I get priority after paying the 1 to target a creature with Equilibrium's ability?
