So, I control merieke ri berit equipped with thornbite staff and magewright's stone. I told my opponent that I can wipe off his creatures with these cards. He did not believe me. So, I explain step by step like below.

Then I use magewright stone to untap merieke.
Creature A dies because merieke untaps.
thornbite staff says "Whenever a creature dies, untap this creature." so this effect goes on the stack.
in response, I tap merieke to control creature B.

That all looks correct as stated. The one nitpick I have is that the last instance of the "untap this creature" ability won't untap Merieke because it's already untapped (untapping an already untapped creature is an impossible action) so the ability will just resolve and do nothing.
Is there a reason why your opponent thinks it doesn't work? I suspect it might have something to do with the part where you tap Merieke in response to a triggered ability that would untap it, which is perfectly legal. The triggered ability goes onto the stack regardless of whether Merieke is tapped at the time.
Yes, Merieke Ri Berit equipped with Thornbite Staff loops like that, and you can end the loop by declining to activate Merieke again. You have it all correct.

No.
112.7a Once activated or triggered, an ability exists on the stack independently of its source. Destruction or removal of the source after that time won’t affect the ability. Note that some abilities cause a source to do something (for example, “Prodigal Pyromancer deals 1 damage to target creature or player”) rather than the ability doing anything directly. In these cases, any activated or triggered ability that references information about the source because the effect needs to be divided checks that information when the ability is put onto the stack. Otherwise, it will check that information when it resolves. In both instances, if the source is no longer in the zone it’s expected to be in at that time, its last known information is used. The source can still perform the action even though it no longer exists.
