My guess would be that if I steal a kitchen finks and it dies during my turn, it would it my graveyard, come back as a 2/1 and I would gain 2 life and then at the end of the turn my opponent would get the control back of the 2/1 kitchen finks.
Is this correct?
For doomed traveler, my guess would be that if I steal it and it dies during my turn, the doomed traveler would go in my graveyard and I would get the spirit permanently.
Is all of this correct too?
Alright, so here we go. In the case of Kitchen Finks, Persist specifically states (As well as Undying) That when a creature with either of those abilities dies, it returns to the battlefield under it's OWNER'S control, not it's controller at time of death's control. So Kitchen Finks would return to whoever you took it from. Doomed Traveler, on the other hand, gives the spirit to whoever controls it at time of death, so you WOULD get to keep the spirit then.
In either case, a card can never be put into someone else's graveyard, so no, neither would go to your graveyard. They would go to their owner's graveyard.
With the Finks, your opponent gets the card back, and it enters their graveyard when it dies in the first place. Note the wording of persist using "owner's control" and no card can ever be put into a graveyard other than its owner's.
The Traveler goes to its owner's graveyard but its controller at time of death gets the token (last known information).
When a creature dies (C.R. 700.4), it goes to its owner's graveyard, not necessarily its controller's (see also C.R. 400.3). However, any ability it has that triggers when it does so, such as persist and Doomed Traveler's ability, will be controlled by whoever last controlled that creature (C.R. 603.10a, 603.10, 112.8).
In the case of Kitchen Finks's persist ability, when that ability resolves, provided it had no -1/-1 counters on it when it died, you return Kitchen Finks to the battlefield under its owner's control with a -1/-1 counter on it (C.R. 702.78a).
In the case of Doomed Traveler's ability, when that ability resolves, it's you who create the Spirit token, since you were Doomed Traveler's last controller (see also C.R. 109.5).
