I guess the real question is the does the game check to see if the creatures die after each layer, or does it do the check after the game checks all the layers?
Yes. You don't even need Valor in Akros since you'll still net one mana off of Ashnod's Altar each time you perform the loop as follows:
1. Activate Mirror Entity at X=1
2. Sacrifice a creature to gain CC
3. Xathrid Necromancer triggers, creating a 2/2 zombie token
4. Repeat steps 1-3
Valor is an additional, though not necessary, combo piece in this scenario.
Would it work without ashnod's alter, just sub it in for another free sac outlet. Maybe Spawning Pit? Mind usually goes to ashnod's altar when it comes to free sac outlets.

Yes, if Valor in Akros or something similar allows X=0 Entity activations. Heck, you can even do it without a sacrifice outlet if you don't control Valor and instead just put a +1/+1 counter on Entity and Necromancer, since Entity will just kill the token anyways. Of course, you'd still need another piece to generate value, but that's besides the point.

Valor in Akros or another pumping effect would indeed be needed then, but yes, that would allow you to rinse and repeat without generating mana within the loop, since you could activate Entity for 0 after the first iteration, and your creatures would survive.
Without Valor in Akros, though BlazingRagnarok is right that you can create an "infinite loop" with Ashnod's Altar, it's one that only nets you infinite colorless mana, you'd require another, unmentionned card to exploit that (say Walking Ballista, just so people don't feel the need to post just to give such an example, we know such cards exist). Valor in Akros in the mix means that you don't need your sac outlet to be one that generates mana, and it means you're growing your creatures' power and toughness to arbitrarily large numbers.
I'm a former judge (lapsed), who keeps up to date on rules and policy. Keep in mind that judges' answers aren't necessarily more valid than those of people who aren't judges; what matters is we can quote the rules to back up our answers. When in doubt, ask for such quotes.

Do I have a infinite combo?
