Let's say my Opponent goes all in on me and charges in with his 5 big creatures (all with 5 power). I block with my 4 small creatures, one of those being Sun-Crowned Hunters. So all my creatures and I get attacked. Before combat resolves, I cast Saving Grace targeting the Sun-Crowned Hunters.
I'm wondering if Saving Grace creates only one packet of total damage, or one packet for each creature that was attacked. In my exemple, would Saving Grace deal one packet of 20 damage or 4 packets of 5 damage on my Sun-Crowned Hunters ??? In the first case, Sun-Crowned Hunters would deal 6 damage to target opponent ; in the second case, Sun-Crowned Hunters would deal 15 damage.
I'd totally build a deck around Saving Grace / Sun-Crowned Hunters if it worked like the second case.

Sun-crowned hunters will trigger only once. Enrage doesn't care about how much damage is dealt only how many times it is dealt damage. Because Saving Grace is a replacement effect and all combat damage is dealt at one time your sun-crowned hunters will take all the damage at one time and trigger once before dying to having taken too much damage.
The creatures all deal combat damage simultaneously (C.R. 510.2); therefore if due to Saving Grace damage is dealt to Sun-Crowned Hunters instead, that damage will likewise be dealt simultaneously with the rest of the combat damage (C.R. 614.6), so Sun-Crowned Hunters's ability will trigger only once no matter how many sources deal damage to Sun-Crowned Hunters simultaneously or how much damage is dealt to that creature simultaneously (C.R. 603.2, especially C.R. 603.2c; C.R. 700.1) (if that ability had said "Whenever a source deals damage to ...", that ability would have triggered once for each such source [C.R. 603.2, especially C.R. 603.2c; C.R. 700.1]).

But I still don't understand why Sun-Crowned Hunters ability triggers only once. Even if all the damage is done simultaneously, that event still contains multiple occurences of that trigger. So according to 603.2c, it would trigger.
I mean, If I attack with Sun-Crowned Hunters and it gets blocked by 2 creatures, I believe it would trigger twice because 2 creatures are dealing damage to it. But according to your replies, it wouldn't... I think I might get it if I warp my head around a bit much... The trigger condition is liked to an event and not an occurence... The exemple of 700.1 make it a little more clear...
So long as the specification of the interactions is logically consistent and computable, then it doesn't matter what kind of imagination we need to make sense of the game's terminology and rules. An object that's dealt damage by any number of sources on one occasion is just "dealt damage" once.
The card that gets passed around is Boros Reckoner, which has a ruling that confirms what this text is intended to mean.

Under C.R. 700.1, the same "'happening'" (e.g., multiple sources dealing damage simultaneously to one creature) "may be treated as a single event by one ability and as multiple events by another." In this respect, compare Sun-Crowned Hunters and Boros Reckoner with Nested Ghoul and Reaper of Sheoldred.
However, if creatures deal damage at different moments to Sun-Crowned Hunters, then the latter's ability will trigger once for each such moment (C.R. 603.2, 603.2c); for example, if some of the attacking creatures have first strike and/or double strike, but others have neither (C.R. 702.7b, 702.4b).
