If I eternalize a Theros God such as Purphoros, God of the Forge with The Scarab God, would Purphoros token enters play as a 4/4 but immediately becomes a non-creature, or will Purphoros token enters as a non-creature and entirely unaffected by Scarab God's effect?

It depends on your devotion when it enters. If it has enough devotion for the ability to not matter it would enter as a 4/4. If you don't have enough devotion it would enter as a non-creature but if it is turned on later it would be a 4/4 black zombie. It would never be completely unaffected by the ability.

I see, so it will be a zombie 4/4 even if it entered as a non-creature.

The token won't be a Zombie as it enters the battlefield since it won't be a creature or a tribal, and only objects of either card type can have creature types (C.R. 205.3d, 205.3m); however, it will become a Zombie as soon as it becomes a creature. Neither will the token have power and toughness until it becomes a creature later (C.R. 208.3, 208.3a). Note that a similar ruling is discussed in this thread, but that doesn't apply to the interaction here, since The Scarab God's effect that makes the token a Zombie applies in layer 1 (C.R. 706.2, 613.1a; C.R. 706.9, especially C.R. 706.9c), not layer 4, where Purphoros's second ability applies (C.R. 613.1d).
