If i active Mirage Mirror to copy Gideon, ally of zendikar that has already became a creature
1. Will the mirage mirror become a 5/5 indestructible too?
My guess is no because it won't copy ability that set p/t, just want to confirm it
2. If My mirage mirror won't become a creature, then it will become a copy of planeswalker Gideon, ally of zendikar then it will die due to not having any loyalty counter, is this right?
Correct on both accounts. The Mirror will become an unanimated Gideon and then promply die to having 0 loyalty counters or, if you control the original Gideon, potentially the planeswalker uniqueness rule.
Copy effects only copy what's printed on the card, or the characteristics the token was created with, plus other copy effects affecting the original. No other effects are copied.
Wait, by that logic, if I have a 1/1 spirit token and my opponent uses their Mirage Mirror to make it a copy of my 1/1 spirit token, and I use MY Mirage Mirroron their now spirit-Mirror during the next phase, my mirror would just become a basic Mirage Mirror?
Mirage Mirror copies the printed values of the target permanent, plus any copy effects that have been applied to it. It won’t copy counters on that permanent or effects that have changed its power, toughness, types, color, or so on. Notably, it won’t copy effects that made the target permanent become a creature.
HOWEVER: If Mirage Mirror copies a permanent that’s copying something else, it will become whatever the target is copying.

I feel like the two errata conflict in this instance.
You are conflating two different things. The first rules says copying an animated Gideon. Shambling Vent, or a crewed Smuggler's Copter results in a Mirror that is just the base of each of those cards because it doesn't copy any effects present on those cards.
There is an exception to this and that is when copying something you copy the base card *except anything modified by other copy effects*. So, copying a Mirror that is copying a 1/1 will give you a 1/1 just like copying a Clone that is copying a Tarmogoyf with Mirror will result in a Tarmogoyf, not the base Clone.
