I have a River Boa enchanted with Pariah and two Llanowar Elves in play. My opponent casts Lavalanche for 1. Do I need to regenerate the River Boa 2 times to keep it alive?
No, once is enough. Even if the damage from Lavalanche was sequential, creatutres die to lethal damage only when state based actions are checked, which happens after the spell has fully resolved. The Boa simply ends up with 2*X damage marked on it instead of X damage, and SBA will try to destroy it once because that damage is lethal.
Pariah creates a replacement effect which is applied duringLavalanche's resolution.
No, just once. State-based actions aren't checked during the resolution of a spell, so even with Pariah enchanting River Boa, when state-based actions are checked after Lavalanche finishes resolving, it will have 2 damage marked on it and just be destroyed once. Regeneration can replace that.
