This is incorrect. You have not cast any spells in this sequence of events so there is nothing for the Paradox engine to trigger off. What you have done is activated the ability on Sensei'd divining top once. Nothing is going to cause to untap.

You draw a card and put Sensei's Divining Top on top of the library only when its second ability resolves (C.R. 608.2c), and it gets to resolve even if Sensei's Divining Top isn't on the battlefield anymore (C.R. 112.7a).
If you cast a spell before that ability resolves, that spell will go on the stack above that ability (C.R. 405.2) and get to resolve before it (C.R. 116.4). In this scenario, this will make Paradox Engine's ability trigger, which will go on the stack in turn, above that spell (C.R. 405.2); when that resolves, you untap all nonland permanents you control, including Sensei's Divining Top in this scenario (assuming it isn't a land).
Now, the stack will hold the spell you cast and Sensei's Divining Top's ability beneath it. Since Sensei's Divining Top is still on the battlefield, but now untapped, you will eventually get priority again (C.R. 116.3b, 116.3d) and can tap it to activate its last ability again.
Now, if all these spells and abilities resolve (in each case after all players pass [C.R. 116.4]), the result will be that you draw a card and put Sensei's Divining Top on top of the library, then the spell you cast resolves, then you draw another card (but can't put Sensei's Divining Top on top of the library since it isn't on the battlefield anymore, so that instruction is just ignored [C.R. 101.3]) (see also C.R. 112.7a).

Not really. You can do this for as many instants as you have in your hand, but you won't get to draw more until you let Divining Top's ability resolve. Once it does, you can draw (and you might be able to draw multiple times if the ability was put on the stack multiple times), but at that point Divining Top is no longer available to you to tap (it's either on top of your library or in your hand).
So, yes, you can keep casting instants in your hand with a single Top on the battlefield and get multiple draws, but you cannot cast, draw, cast, draw, etc.
