So I had a fun commander battle today but during the duel some questions came up that we basically had to make assumptions on. So hopefully someone can answer these for me:
Scenario 1: I have a creature on the field that gets +1/+0 for every artifact I control. I have 16 artifacts, so his total strength is 16/2. My opponent steals it for the turn. Does his counters change based on the amount of artifacts he controls? He has 2 artifacts. So would his strength be 2/2? Or would it remain at 16 + the 2 he also has?
Scenario 2: My opponent steals a creature from me that I have equipment on. This equipment also says get +1/+1 for each artifact I control. When my opponent steals the creature, does the equipment go over to his field? If not, does it still refer to the amount of creatures I own or that he owns?
Scenario 3: I enter my battle phase and declare my attackers, my opponent responds by playing an instant that says switch control of all creatures for the turn. Does the battle end? What happens? I assumed the battle is interrupted, and ended the turn until control swapped again.

This question can't be answered without knowing the texts of the cards you mean.

If the effect doesn't say it changes control of the Equipment, then control of the Equipment doesn't change. Your Equipment refers to your artifacts.
Scenario 3: I enter my battle phase and declare my attackers, my opponent responds by playing an instant that says switch control of all creatures for the turn. Does the battle end? What happens? I assumed the battle is interrupted, and ended the turn until control swapped again.
If control of creatures changes, those creatures are removed from combat, so they stop being attacking creatures. The combat phase won't amount to much if there are no attacking creatures.

As Horseshoe_Hermit alluded to, this is the exact reason you need to use to card tags when asking rules questions. Most likely, your creature doesn't have counters at all (though it is, of course, conjecture). Let's use an example: Akiri, Line-Slinger. You notice Akiri doesn't say "counter" anywhere on her card. But, her text matches the summary you gave. So, either it is a totally different card or there is a misunderstanding of Akiri's ability.
Using her as the example: she doesn't give counters. She gets a buff for how many artifacts her controller controls. If the controller changes, then "you" in her text refers to someone else. So, when your opponent takes control of her, she checks for the artifacts they control.
Thanks for the responses. Yes, my first creature was Akiri, the Line-Slinger. I figured that her strength changes based on who has it.
One last nooby question - can you equip your equipment onto any creature, or only yours? In general. Assuming the card doesn't specifically say only yours or your opponents creature.
The Equip ability can only target a creature you control. So, if you activate the equip ability of Bonesplitter the target of the ability must be one of your own creatures.
However, that does not mean your equipment can't be attached to opponent's creatures. Your examples already show this is possible. Magnetic Theft will let you "steal" an equipment (you don't gain control of it; it is just attached to your creature) or attach one of your equipment to an opponent's creature. Again, this doesn't change control of the equipment.
