I can't seem to find a straightforward answer for my question anywhere online so here it is:
Can you destroy a creature that is being used to Crew a vehicle?
I don't mean before it Crews the vehicle, but instead after they have been tapped to Crew. Or in my case, I target the creature with a spell, and in response, my opponent taps the creature to Crew the vehicle. Does this cause my spell to fizzle?
Here is the scenario: My opponent has a Renegade Freighter on the battlefield, and say Speedway Fanatic. It is my turn, and I target Speedway Fanatic with Fiery Impulse. If my opponent taps the Fanatic to crew his vehicle, is the creature now an illegal target or does it still get targeted because it is not being exiled/removed from the game? My understanding is that they could Crew the vehicle (so they have a blocker presumably) but the creature still dies from my Fiery Impulse.
Your understanding is correct.
Using a creature to crew a vehicle doesn't do anything to the creature, except tap it. Nothing about it crewing or becoming tapped changes it from being a valid target for the spell, (unless the spell actually desingated the target being an untapped creature eg Asphyxiate).
Tapping the creature to activate the crew ability doesn't do anything to the creature. It's still on the battlefield, just tapped now. In your case, the Fanatic is still being targeted by the Impulse, and the Impulse will still deal 2/3 damage to it like normal, killing the Fanatic.

My friend seems to think you "equip" the creature to the vehicle similarly to an enchantment or equipment. I think it is because he has played with people who put the tapped creature under the vehicle to denote tapping for said vehicle.

So the Speedway Fanatic will still die to your Fiery Impulse, even if it is used to crew the Renegade Freighter in response.
