At the beginning of my upkeep, my Primordial Ooze triggers and I respond by giving it to my opponent with Zedruu, the Greathearted. Is it true that once Zedruu's ability resolves, the Ooze's effects don't happen because it's not the controller's upkeep?
The Ooze's effect will happen just fine. A triggered ability on the stack is controlled by the player who controlled the source as it triggered (or the owner of the source, if it has no controller). You have put the trigger on the stack, and nothing about its effects demands, that you control the Ooze after the trigger event happened. You can put a +1/+1 counter on it, so you do. Then you may pay mana. If you don't the Ooze becomes tapped and deals damage to you. Your opponent doesn't get to do anything, and nothing is done to him.
The triggering condition of a triggered ability is checked only once, when it happens (unless it has an 'if' clause, not the case here). So, when your upkeep begins, the ability triggers and goes to the stack, and will resolve even if the Ooze changes controller.
In fact, you still control the ability on the stack even after giving Ooze to your opponent. It is still you, not your opponent, who needs to pay the mana and who will be dealt damage if the cost isn't paid.
