Say I have a creature equipped with both Assault Suit and Captain's Claws in a multiplayer game. On one opponent's turn, I have him gain control of the equipped creature from Assault Suit's trigger. Opponent one decides to attack opponent 2, and this causes Captain's Claws to trigger. What happens with the token? I control the Captain's Claws, so I should get the token, but do I just get a tapped token (since it's not my turn, I don't think I can get an attacking token)?

Yes, you just get a tapped token. You're correct that you get the token because you control Captain's Claws, but it can't be attacking because you're not the attacking player.
506.3b If an effect would put a creature onto the battlefield attacking under the control of any player except an attacking player, that creature does enter the battlefield, but it’s never considered to be an attacking creature.
