So if my opponent has Vedalken Orrery and Omniscience out can he cast creatures before I destroy omniscience with Krosan Grip ? I did it in response to him casting a creature. Can he cast multiple creature before I'm able to resolve a card with split second?
702.60a Split second is a static ability that functions only while the spell with split second is on the stack. “Split second” means “As long as this spell is on the stack, players can’t cast other spells or activate abilities that aren’t mana abilities.”
It's not a matter of priority, but Krosan Grip stops him from adding new spells to the stack.
He could hold priority after casting the first creature and cast the next, hold priority to cast the third, etc. However, in a tournament setting you are assumed to pass priority after you finish casting a spell unless you explicitly say otherwise.
If your opponent didn't explicitly say something like "Cast Runeclaw Bear, in response to Runeclaw Bear cast Grizzly Bears...", then by implication he is passing priority to you after the first spell cast, at which point you can use Krosan Grip on his Omniscience to prevent him from playing anything else for free.
After a player casts a spell, they retain priority, and could cast another spell or activate another ability before passing priority to you. If they suspect you may have Krosan Grip, because of the Orrery, they could cast a lot of spells before you get priority to cast the Grip.

Scientists have calculated that the chance of anything so patently absurd actually existing are millions to one. But magicians have calculated that million-to-one chances crop up nine times out of ten.
