For example, I cast a spell and I have echo mage copied that spell then someone cast a counterspell to cancel the original spell, does that mean my echo mage will not be able to cast the copied spell as well since the original was cancelled?
It actually depends on how the process plays out but most likely, you will not get your copy. Here are the two possibilities:
1) You cast a spell (let's say it is Time Warp). In order to copy it, you need to hold priority and activate Echo Mage's ability. You do that and then in response to Echo Mage's ability, they counter the original spell. This means that when Echo Mage's ability goes to resolve, the original won't be on the stack to be copied so the ability will be countered due to no longer having a legal target. You will not get a copy.
2) You cast Time Warp and pass priority. Your opponent tries to counter Time Warp. In response, you activate Echo Mage's ability to create a copy. The ability resolves and you get a copy. Then, the copy resolves and the counterspell resolves countering the original spell so you only get 1 copy.
The problem with option number 2 is that you pass priority to see if they have a response. If they choose to do nothing, you have already passed priority so you will not get another chance to copy the original spell and it will resolve before you can activate Echo Mage's ability. To truly do what you want, you need to hold priority to activate Echo Mage's ability which creates a situation where they could counter the original to prevent you from getting any copies.
If they wait to counter the original spell until Echo Mage's ability has resolved, then you will still get the copy, but most likely they aren't going to do that.
Note that Mindbreak Trap and Time Stop also get around "can't be countered", but not split second.

No. Echo Mage lets you change the target if you want. However, Mass Polymorph doesn't have any targets so there is nothing to change. A good rule of thumb is that if you can't cast it and target something, Echo Mage can't change it to that target either.
The "you" in the text always refers to the controller of the spell and in your example, you will still control the copy.
No. Mass Polymorph doesn't have any targets. The affected player ("you") will always be the controller of the spell. All copies of a spell created by your own Echo Mage are controlled by you, you cannot create copies for your opponent with Echo Mage.
