Lets say I have an Ajani Goldmane, Hangarback Walker and Anafenza, the Foremost, if I give the hangarback and Anafenza vigilance with Ajani's minus ability, Then attack with those two creatures, can I respond by tapping my Hangarback ability, thus getting 2 +1/+1 counters (one from Anafenza the other from it's ability)?
No. The targeting restriction on Anafenza's trigger is "another target tapped creature you control". The creature you target must already be tapped when Alesha's trigger is placed on the stack (which is when she attacks), as targets are chosen then.
No you can't do that. After you declare attackers Anafenza's ability triggers and goes on the stack. At that point you'd need to choose a legal target for the ability. Since you wouldn't get priority between the time you attacked and the ability going on the stack you won't be able to tap the walker to make it a legal target. So if at that point you don't have any creatures that are tapped Anafenza's ability would be removed from the stack before you would receive priority.
