How does the stack work when you cast a spell and then a "when you cast" effect happens? Specifically, if I have a Noosegraf Mob with one counter left and I cast Corpse Churn, what happens? This is what I think would happen:
1. Corpse churn goes on the stack.
2. Noosegraf mobs effect triggers.
3. I get a zombie and the mob dies.
4. Corpse churn resolves, and I can return Noosegraf mob to my hand with it.
Is this right?

Yes that is correct as the triggered ability will resolve before the spell that caused it to trigger.
Note that this mainly works because Corpse Churn doesn't target. If it was something like Reanimate it wouldn't work simply because the target still has to be chosen when the spell is cast and Noosegraf Mob would still be on the Battlefield at that time.
