I have Moorland Inquisitor on the battlefield. My opponent casts Human Frailty. I can respond with Momentary Blink to effectively dodge that attack, correct? Question is, at what point or phase does is return to the battlefield? It does not say. Eerie Interlude at least tells me that the card returns at the beginning of the next end step.
EDIT: Well after some more research, I found that, yes, It can be used to dodge targetted removal spells. However, I've seen mixed answers on whether it undergoes 'summoning sickness' again. Can anyone clarify this for me? Sorry for any time wasted.

It will regain "summoning sickness" as it is considered a new object which has not been under your control for a full turn.
99% correct. It does have summoning sickness until the beginning of your next turn - not a full turn. Slight difference, but does impact things like flash creatures.
