Rattlechains says "When Rattlechains enters the battlefield, target Spirit gains hexproof until end of turn." It does not specify a spirit that you control similar to how Mizzium Skin, Ranger's Guile, or Void Grafter would.
So what happens if my opponent controls say a Farbog Revenant, they cast Uncaged Fury targeting it, and, in response, I flash in Rattlechains targeting their Revenant with the ETB effect?
Does the spell fizzle because now the Revenant can't be the target of spells or abilities my opponents control? Or can I simply no longer target the Revenant until EOT?
It's the latter. It's a creature they control which has hexproof, so you, their opponent, cannot target the Revenant. That hexproof was given by an ability you controlled does not make it work in reverse.

No. Unlike Vines of Vastwood, which prevents your opponents from targeting the creature, Rattlechains grants hexproof, which prevents opponents of the permanent's controller from targetting it.
You can target their Revenant and then it will gain Hexproof. Since they still control the Revenant, and Revenant has the Hexproof, they can target it all they want just like they could for any other Hexproof creature they control.
