I would gain 84 life thanks to True Conviction giving lifelink, and the there would be another hit from Balefire Dragon since he would have double strike too, so, would he deal 12 damage again or 48 damage to my opponent?
Also, does Gisela, Blade of Goldnight's effect makes all of my creatures deal double damage (if they deal damage) or just one of my creatures? If i had 2 dragons 4/4 and I attack, would both of them deal double damage or just one?

The dragon deals 12 damage again. The same action is happening during the second combat damage step as happened during the first: the dragon is connecting for 6 damage, and Gisela's replacement effect turns that into 12 damage. The game doesn't look at the history of how much damage the creature has dealt and double that every time, the only reason your dragon deals 24 damage to each of those creatures is because Balefire Dragon's triggered ability checks how much damage you actually dealt, 12, and tries to do that much, but because a separate instance of damage is occurring, Gisela's ability doubles it again. Because the amount of damage dealt by the second "strike" the creature connects on is tied only to its power, 6, it only deals 12 damage.

Gisela affects all of your creatures. Her replacement effect doesn't specify that you have to choose a creature or anything of that nature, so it doubles the damage dealt by any and every source dealing damage to your opponent.

Then, the normal damage remaining from the initial double strike would trigger(6x2) to the opp?
The reason I made them 13/13s is so they survive they survive the initial 12 damage from bale fire(whether double strike or normal) and would still be alive if the damage to them would be double strike.
Just a single instance of damage. Double strike, like first strike, basically only creates a second combat damage step in a combat phase where a double striking creature is attacking or blocking. It does not mean, that damage gets doubled, only that the creature gets to hit in both combat damage steps instead of just one of them.

They would need to be */25s to survive Balefire's first trigger.
Balefire tries to deal 6 damage to the opponent, which Gisela doubles to 12.
Balefire sees that it did 12 damage to the opponent, and tries to deal that much to each of the opponent's creatures, which Gisela doubles to 24.
If the opponent had a creature which survived the first Balefire trigger (for example, because it had 25 toughness), due to double strike Balefire would try to do 6 to the opponent again, which Gisela would double to 12 again.
Balefire would see the 12 and try to do 12 to the surviving creature(s) again, which Gisela would double to 24 again.
Note that if Balefire kills the opponent in the first combat damage step (from the initial 12 damage), it will not deal damage to the opponent's creatures, as they do not exist anymore, and it will also not deal "second strike" damage either (player is dead), so you would only gain 12 life.
