If a spell or ability you control attempts to counter a spell that can't be countered, it doesn't. Since the spell wouldn't be countered, Guile's ability has no effect on it. The spell will continue to resolve normally.
And if I use Mindbreak trap, will the ability trigger?

If the spell can't be countered, there won't be anything for Guile's replacement effect to replace; the spell won't be countered, and it won't be exiled.

Mindbreak Trap isn't a good analogy because spells that can't be countered won't be countered or exiled, which is a different functionality than Mindbreak Trap (which in contrast would be able to exile spells that couldn't be countered).
Any nonland card is played as a spell, not just an instant or sorcery, so Guile's effect applies to creature spells that are countered as well as noncreature spells.
As for the new question you edited in after figuring out the first part, Mindbreak Trap doesn't counter any spells (which is how it gets around spells that can't be countered in the first place), so Guile doesn't interact with it.

I guess there is only one not complicated way aside enchantments to steal and cast Emrakul - Totally Lost + Nightveil specter.
If I have Guile and In the eye of chaos in play, does it mean I don't have to pay the double and still get to cast my spells and opponent's (if he doesn't pay) too?
The problem is that in the eye of chaos will trigger off the cast from Guile, This can loop as many times as you want but eventually you will either have to pay the cost or leave it in exile (since guile says may cast).

Yes, you can cast the spell for free off of guile once eye of chaos counters it. That casting of the spell will also trigger eye of chaos and counter the spell again. Then guile will let you cast it for free again. Great way to build up a storm count if that's what you're going for. Does not get around eye of chaos though.
So you could build up an arbitarily large Storm count and then just use Grapeshot to do a trillion damage? :D, assuming you had 1R plus the extra 2 to satisfy the world enchantment?
Guile's trigger is more analogous to dissipate rather than MBT. The spell is exiled only if it would be countered. This is a replacement effect that replaces "put into graveyard" with "put into exile".

1) The question is: I have Guile on the battlefield and my player casts Emrakul, the Aeons Torn or any other uncounterable spell/creature.
The rules on Guile say: and So, does this mean that if I use Counterspell on Emrakul, thanks to Guile I will exile it and play it for free? Or Counterspell won't work?
