I'm curious if you have a dragonlord Atarka on the battlefield tapped and attacking and hasted Flamerush Rider, copied Dragonlord Atarka, if you can use it's "when it enters the battlefield, it deals 5 damage" ability then sacrifice the clone, instead of the actual Atarka?

I assume you are asking about putting the copy into the Graveyard due to the Legend Rule?
Yes. You will create a copy of Dragonlord Atarka, and its EtB effect will trigger. Before it resolves, you will have to choose one of the Dragonlord's to put into the graveyard. Even, if you choose the copy, this will not prevent the ability from resolving and dealing damage.
Yes, you can do this. Flamerush Rider doesn't have any restriction on copying as long as the other creature is attacking, so you can choose Dragonlord Atarka. When the copy is created, it enters the battlefield, so its ETB trigger will happen. Since you control two legendary permanents with the same name, you're going to have to choose one to put into the graveyard, but choosing the token is acceptable, and won't stop the trigger from happening to let you deal 5 damage as you choose to your opponents' creatures/planeswalkers.
