If you put Dragonlord Simulgar on the battlefield, you will get its ETB trigger just as if you had cast it and it resolved. If you have a legal target when the ETB hits the stack and when it resolves, you gain control of their creature. And yes, if they put Emrakul, the Aeons Torn on the battlefield due to Show and tell, you can target it with Dragonlord Simulgar's ETB effect because they are both on the battlefield at the time trigger hits the stack.
Dray has it right. When Show and Tell resolves, both creatures hit the field at the same time, and then Slumigar's ETB effect happens. As long as your opponent plays a creature that is a legal target, it's fair game.
Replacement effects that involve choices of card name (or colour or type) upon entry (say Pithing Needle or Iona, Shield of Emeria or Adaptive Automaton) are chosen before any of the permanents enter the field, but after they have been revealed so you can name the card that your opponent is putting on the field for your Pithing Needle if you want.
Todd, question about this. The Gatherer rulings for Show and Tell say that you don't have to reveal:
The current player chooses first, then each other player chooses in turn order. A player does not have to reveal the chosen card, so long as it is clear *which* card was chosen. After all choices are made, the cards are put onto the battlefield simultaneously.
But also agrees with you that choices that are made before the cards enter the battlefield are made after all cards have been chosen but, naturally, before they enter the battlefield simultaneously:
If the cards being put onto the battlefield also require choices, those choices are made after all players choose their card. The active player makes choices for their card (if any), then the other players (if any) in turn order.
So in the case of Pithing Needle, for example, my opponent could choose Pithing Needle and reveal it, but I choose to not reveal my card. Then he must choose for Pithing Needle without my card revealed, right? But how would it work if we both chose not to reveal? As I'm going to reveal my card to put it on the battlefield, is he obligated to say "wait, I have a choice to make first"? no. The ruling is saying you don't have to reveal as part of choosing the card. Once both cards are chosen (weather revealed before the choice or not) they both become known to both players in time to name the other card with pithing needle, etc.
400.6. If an object would move from one zone to another, determine what event is moving the object. If the object is moving to a public zone, all players look at it to see if it has any abilities that would affect the move. Then any appropriate replacement effects, whether they come from that object or from elsewhere, are applied to that event.
Reveal was a poor word choice since its also a thing in magic. When Show and Tell resolves all players select the card they're putting onto the battlefield in APNAP order, usually be setting it aside facedown or something similar. Once all the cards have been chosen, they are shown to all players per rule 400.6(see above post) to determine what replacement effects apply to the 'enters the battlefield from hand' event. Since the permanents are entering the battlefield simultaneously, we apply rules 400.6 to all of the at the same time meaning when you would make choices for any replacement effects, you know what artifact, creature, land, or enchantment your opponent is putting onto the battlefield.
