Absolutely not. Spellskite's ability cannot be activated from the graveyard. I'd also say that the wording on unburial rites is specific, and can only target the controller's graveyard. So even if an opponent were to respond to Unburial Rites with a Misdirection, they couldn't legally redirect the spell to a creature in their own yard.

No. First, I assume you mean Spellskite is in the graveyard in this situation? If that is the case, then Spellskite's activated ability can't even be activated while it is in the graveyard. Second, even if Spellskite is on the battlefield, it can only change the target of a spell to another legal target. The only thing that Unburial Rites can target is a creature card in a graveyard. If you were to activate Spellskite's ability targeting the Unburial Rites on the stack, when that ability resolves, it will do nothing.
