Hey, so apparently I'm a tad behind on rules, considering I just found out the other day that combat damage no longer uses the stack. Still trying to wrap my head around all the changes that brings into the game. But here's one I can't quite figure out.
As far as I understand, if an attacking creature is blocked by multiple blockers, the attacking player declares what order the blocking creatures will be dealt damage as part of the declare blockers step. Then players have the ability to cast spells and activate abilities in response.
My question is this:
If you attack with Creature A, and I declare blockers Creature B and Creature C, followed by you saying that you will assign damage from Creature A first to Creature B then Creature C, what happens if I return Creature B to my hand, say with a Deputy of Acquittals. Does that assigned damage disappear, or is it instead all assigned to Creature C, because you merely declared the order of assigned damage?

At what point is damage actually assigned?
There is no time once damage is physically assigned and before it is dealt to do anything.
