I control Death's Presence and my only creature in play is a Grizzly Bears with a Herald of Torment bestowed on it. If the Grizzly Bear dies, do I end up with an 8/8 Herald of Torment? That is, does the aura fall off and become a creature in time to be targeted by the triggered ability on Death's Presence?

Yes. By the time you put the Presence's trigger on the stack, the Herald has become a creature, so it is a legal target for the ability.

Scientists have calculated that the chance of anything so patently absurd actually existing are millions to one. But magicians have calculated that million-to-one chances crop up nine times out of ten.
No, it's "faster" than a state-based action. The "this is an aura" effect ends the very moment the thing it's attached to leaves the battlefield. Though if it was a state-based action, the answer would be the same, since state-based actions are checked just before triggered abilities are put on the stack, which is just before a player would get priority.

The thing to remember is that Creatures with Bestow are naturally Creatures. They are changed into Auras as an effect that has a certain duration. The duration starts when you cast it by paying the Bestow cost (before it goes on the stack, even, I believe) and lasts until it is no longer attached to a creature for some reason. That can happen at any time, even during the resolution of a spell or ability. When you care if it is a creature or not, just check to see if it's attached; if not, it's a creature. There's no timing issues to worry about.
Huh. I had to look this up again, but you're right. Looks like the card gets to the stack before you decide whether you're paying Bestow or not. Leads to very counter-intuitive interactions with cards like Gaddok Teeg, seems like.
