As I believe I read in the rules, the defender chooses the blocking order so, it would seem that by the time the Wind Drake and Crusader of Odric match up, the Crusader would be a 1/1 as he is the only creature the attacker has left, no?
Or, is it the case that all the damage resolves at the same time and Crusader of Odric kills the Wind Drake?
all combat damage is dealt at the same time. so the merfolk and soldier kill each other. the drake deals 2 damage to the Crusader & the Crusader deals 4 to the Drake. the Drake, the soldiers & the merfolk die. then the Crusader is a 1/1 with 2 damage marked on it and dies.
All damage is dealt at the same time. The drake dies and only after damage is dealt does the crusader drop in power and then it also dies cause now its a 1/1 with lethal marked on it.

To be clear as it isn't included in the answers above the blocking order is only relevant when you have more than one creature blocking a single attacker and is chosen by the attacking player. Like if all 3 merfolk were blocking your crusader you would chose the order in which the merfolk will be assigned damage in. Even then all damage that the crusader would deal in the relevant combat damage step is dealt at the same time to all the creatures blocking it.

Player 1 has only these, and attacks with all:
- Crusader of Odric
- 1/1 Soldier
- 1/1 Soldier
- 1/1 Soldier
Player 2 blocks, in order as follows:
- Merfolk of the Pearl Trident blocks a soldier
- Merfolk of the Pearl Trident blocks a soldier
- Merfolk of the Pearl Trident blocks a soldier
- Wind Drake blocks Crusader of Odric
Now, is it the case that Crusader of Odric kills the Wind Drake or vice versa.
