"Destroy" type cards allow you to target and are theoretically better for a board state where your opponent has multiple creatures. However, they are worthless against Hexproof, Shroud, and Indestructible creatures. "Sacrifice" cards are great when your opponent has a single threat or a threat that you can't target or otherwise destroy.
The first one (destroy target creature) is much more maindeck-able because a large subset of creatures don't have hexproof, indestructibility, or protection. You probably want some Edict (target player sacrifices a creature) effects in your sideboard if a creature that can't be targeted or destroyed is currently a presence in the format/meta.
