I was playing my Arahbo deck the other day and it had Mirror Entity in it, and my opponent pointed out that was a little "going wide" for the deck's purpose.
What would be an example of a "going wide" strategy, for example in a Voltron Commander deck (like Thrun or Sigarda)?

It means to drop an bunch of little creatures/tokens onto the field then pump all of them up. Mirror Entity is the "pump" portion of this by making your tiny creatures much bigger.
I'm not sure where the phrase actually comes from.
I honestly can't think of any specific strategy/cards off the top of my head that's relavent at the moment. I'm feeling a little blah today.

It's just a directional metaphor. Spreading your resources "wide" over a relatively flat threat level, whereas the opposite, "going tall," means stacking everything you have in a single or a couple HUGE threats.
It's basically the opposite of a Voltron. Instead of building up one or two big creatures, you build up an army of small ones, for which mass pump effects are much more powerful.

"Go Wide" means to play tokens and then things that buff those tokens. Mirror Entity is a payoff card that rewards you for going wide, by buffing your swarm of tokens into an unstoppable army.
This is in contrast to "going tall", which is more of a Voltron strategy, where you load up one creature with buffs to the point where it dominates the board and forces through damage via evasion, trample, etc.
Each strategy has different tactics that work well against it. Going wide is more vulnerable to mass removal like [c}Wrath of God[/c], as that can eliminate all of your tokens or small creatures, that you likely invested a bunch of cards into, in one go. On the other hand, it's resilient to spot removal, as you can get multiple bodies out of a single card.
Going tall is more resilient to creature-based mass removal, as it's easy to just drop another creature (or recast your commander) and equip a bunch of stuff to it, since the equipment lives through many sweepers. On the flip side, a few well-targeted spot removal cards can leave you high and dry, as you run proportionately fewer actual threats. Additionally, if you lack evasion or trample, you can be walled by a go wide strategy.
There are a few Commanders that allow you to go both wide and tall. Kemba, Kha Regent is one that wants to be voltron'd up, and rewards you with an army for doing so.
Usually the question I get is "what is an aggro / midrange / control / combo deck and how do I play it" more than what go wide means. I remember explaining it through the lens of martial arts and fighting games.

There's also a few equipment cards that work well in a wide+tall strategy like this. Pennon Blade, Veteran's Armaments, Stoneforge Masterwork, and Sigil of Distinction make your tall guy taller the wider you go. Dragon Throne of Tarkir, Sword of the Paruns, and Konda's Banner grow your army from your voltron creature.
